With the recent opening of the Caboose at the acclaimed Brasserie in Grand Cayman - home to Executive Head Chef Dean Max - comes a very rare collaboration with the pioneer of “Hawaiian fusion” Chef Roy Yamaguchi from Eating House 1849.
