The five-course tasting menu with rum paring is $120 per person. Dishes include crispy pork belly with wood-roasted pineapple and rum glaze, roast red snapper with arroz negro, local sprats and tomato sauce, Angus tenderloin with local pumpkin and Cayman-style beef croquette and Cayman sea salt caramel tart with coconut and coffee ice cream.
